Scootie

We don’t keep cookies in the house and rarely eat them anymore. Even when we used to make them, though, we’d prefer to eat the dough. But every once in awhile you just want something cookie-like, so we invented this simple recipe.

2 C oats
1.5 C stemmed dried figs
boiling water (< 2 C)
3 ripe bananas
(optional: cinnamon)
(also optional: Maple & Brown Sugar instant oatmeal packet)
(also optional, after mixing: toasted coconut flakes)

Scootie.

Stem the figs and place in a 1.5 C vessel. Cover with boiling water and let these soak for a few minutes. Dump all but the coconut into a food processor. Run it until the big lumps are gone. Serve ~1 C with toasted coconut on top. If you like things a little sweeter, use the instant oatmeal packet. Otherwise not. Juggle cinnamon to taste. Scootie is remarkably high in fiber but tastes good.

We named this in a roundabout way as a dish that will hopefully keep us from needing to use a mobility scooter. (We call them something a little less PC, but I learn so much when googling for appropriate images.)
